Chipotle Chicken Burrito

Lets make this dish (Serves 4)

You will need:

For the Chicken Mince Filling:

  • 1 pound (450g) ground chicken mince

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tablespoon olive oil

  • 1 teaspoon ground cumin

  • 1 teaspoon chili powder

  • 1/2 teaspoon paprika

  • 1/2 teaspoon dried oregano

  • Salt and pepper to taste

  • 1/2 cup tomato sauce (passata)

  • 1/2 cup chicken broth

For the Homemade Guacamole:

  • 2 ripe avocados, peeled and pitted

  • 1 small red onion, finely chopped

  • Chopped jalepenos

  • 1-2 tomatoes, diced

  • 1 lime, juiced

  • 2 tablespoons fresh cilantro (coriander), chopped

  • Salt and pepper to taste

Additional Burrito Ingredients:

  • 4 large flour tortillas

  • 1 cup cooked rice

  • 1 cup black beans (canned, drained, and rinsed)

  • 1 cup shredded lettuce

  • 1 cup shredded cheddar cheese

  • Sour cream and salsa for serving (optional)

  • Chipotle sauce (Can make own or get store bought)

Process:

1. Prepare the Homemade Guacamole:

  • In a bowl, mash the ripe avocados with a fork until mostly smooth, leaving some chunks for texture.

  • Stir in the chopped red onion, Diced jalapeños , diced tomatoes, lime juice, and chopped cilantro.

  • Season with salt and pepper to taste. Set the guacamole aside.

2. Make the Chicken Mince Filling:

  • In a large skillet, heat olive oil over medium-high heat. Add the chopped onion and minced garlic, sauté until fragrant and translucent.

  • Add the ground chicken mince and cook, breaking it apart with a spatula, until it's no longer pink and nicely browned.

  • Stir in the ground cumin, chili powder, paprika, dried oregano, salt, and pepper.

  • Pour in the tomato sauce and chicken broth, then reduce the heat to a simmer. Allow the mixture to simmer for about 10-15 minutes, or until it thickens and the flavors meld together. Taste and adjust seasonings if needed.

3. Assemble the Chicken Mince Burritos:

  • Warm the flour tortillas in a dry skillet or microwave for about 20 seconds until pliable.

  • Lay out each tortilla and spoon some cooked rice down the center.

  • Add a generous scoop of the chicken mince mixture on top of the rice.

  • Sprinkle with black beans, shredded lettuce, and shredded cheddar cheese.

  • Top it all off with a dollop of the homemade guacamole.

  • Spill on some chipotle sauce

4. Roll Up Your Burritos:

  • Fold in the sides of the tortilla and then roll it up from the bottom, creating a neat burrito.

5. Serve and Enjoy:

  • Serve your delicious Chicken Mince Burritos immediately. You can optionally add a dollop of sour cream, chipotle sauce and some salsa on top.
