Jerk Chicken Tacos

Ingredients:
- 1 lb boneless, skinless chicken Breast
- 2 tablespoons all-purpose seasoning
- 3 tablespoons premade jerk paste
- 1 bell pepper, sliced
- 1 onion, sliced
- Mini flour tortillas
- 1 cup BBQ sauce
- Vegetable oil for frying
- Mozzarella cheese (optional)
Instructions:
1. Butterfly your chicken breast then In a bowl, marinate chicken Breast with all-purpose seasoning and 2 tablespoons of jerk paste. Allow it to marinate for at least 30 minutes.
2. Cook the marinated chicken in a large pan over medium heat until fully cooked and slightly crispy. Shred the chicken in the pan using two forks.
3. Add sliced bell pepper and onion to the pan with the shredded chicken. Cook until the vegetables are tender.
4. In a small saucepan, combine BBQ sauce and 1 tablespoon of jerk paste. Simmer the sauce over low heat until well mixed and heated through.
5. Heat vegetable oil in a separate pan for frying. Dip each mini flour tortilla into the cooked chicken sauce, ensuring it's coated, and then fry briefly until it's slightly crispy.
6. Optionally, sprinkle mozzarella cheese over the tortilla while it's frying until it melts.
7. Place the fried tortilla on a flat surface, spoon some of the jerk chicken mixture onto the center, and fold to form a taco.
8. Repeat the process for each taco, frying and assembling them individually.
9. Serve your jerk chicken tacos immediately, and enjoy the delicious blend of flavors and textures.
