Chilli Con Carne

It’s been a hot sec but lets cook!

I love a good Chilli Con Carne - Especially when its chillyyy ;o

Life is so busy but I wouldn’t have it any other way though so recipes like these ensure i’m still eating good but on a budget and on a time constraint! A lot of these Recipe’s have been sitting in my backlog so take take and take! <3

I won’t do a lot so lets get right into the recipe xoxo

(Serves 4)

Ingredients:

- 1 lb ground beef

- 1 onion, diced

- 1 red bell pepper, diced

- 2 cloves garlic, minced

- 1 can (15 oz) kidney beans, drained and rinsed

- 1 can (14.5 oz) diced tomatoes

- 2 tablespoons tomato paste

- 1 tablespoon chili powder

- 1 teaspoon ground cumin

- Salt and pepper to taste

- Optional toppings: shredded cheese, sour cream, chopped cilantro

- Cooked rice or tortillas for serving

Instructions:

1. In a large skillet or pot, brown the ground beef over medium heat until no longer pink. Drain excess fat if needed.

2. Add diced onion, bell pepper, and minced garlic to the skillet with the cooked beef. Cook until vegetables are tender, about 5-7 minutes.

3. Stir in drained and rinsed kidney beans, diced tomatoes (with juices), tomato paste, chili powder, ground cumin, salt, and pepper. Mix well to combine all ingredients.

4. Bring the chili to a simmer, then reduce heat to low. Let it simmer uncovered for about 20-25 minutes, stirring occasionally, to allow flavors to meld and chili to thicken.

5. Taste and adjust seasoning as needed. Add more chili powder or salt and pepper according to your preference.

6. Serve the chili con carne hot, garnished with shredded cheese, sour cream, and chopped cilantro if desired. Offer cooked rice or warm tortillas on the side for serving.
