Chickpea Coconut Curry (VE)

Crazy how time flies omg, but anyway hey guys happy new year and dem tings deya.?

I'm really going for the healthy eating route this year not for any specific reason but I've started hating feeling FULL after a meal like idk how to explain LOOL?!

So i'd rather make something lighter that makes me feel good uno, tastes nice and doesn't feel like a lot but is satisfying, can't explain it properly but oh well

I'm really tryna up my game this year I let TikTok slip away but that's because they're soooooooo horrible like I get shadow banned every other day and I can't be bothered

Buttttt I made a vegan friendly chickpea coconut curry, absolutely gorgggg 10/10 would recommend

Lets make it! (Serves 2)

You will need :

  • Tin of chickpea

  • Spinach leaves

  • Onion

  • Tinned tomatoes

  • Coconut milk

Process :

  • Dice the onions & sauté them in a pan

  • Add in the tin of tomatoes & let it simmer for 2 minutes

  • Drain & add in the tin of chickpeas

  • When the sauce has reduced add seasonings of choice (black pepper and salt should be the bare minimum pls)

  • Add in your spinach leaves

  • Add in tin of coconut milk

  • Allow to simmer for 5 minutes on low heat

  • Serve with rice & voila solid grub
