- 1 pound (450g) boneless, skinless chicken breast, cut into strips
- 1 pound (450g) Cajun-style beef sausages, sliced
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup (240ml) chicken broth
- 1 cup (240ml) Double cream
- 2 tablespoons Cajun seasoning
- 2 tablespoons old bay seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Parmesan cheese (optional, for garnish)
Instructions:
1. Cook the pasta according to package instructions. Drain and set aside.
2. In a large skillet, heat olive oil over medium-high heat. Add chicken (Seasoned to your liking) and sliced beef sausages, cooking until browned and cooked through. Remove from the skillet and set aside.
3. In the same skillet, add chopped onions and cook until softened. Add minced garlic and cook for an additional 1-2 minutes.
4. Add sliced bell peppers to the skillet and cook until they begin to soften.
5. Pour in chicken broth, scraping the bottom of the skillet to release any flavorful bits. Bring the mixture to a simmer.
6. Stir in double cream, Cajun seasoning, old bay, salt, and pepper. Allow the sauce to simmer for a few minutes until it thickens slightly.
7. Return the cooked chicken and beef sausages to the skillet, tossing to coat them evenly in the Cajun sauce.
8. Add the cooked penne pasta to the skillet, tossing everything together until well combined and heated through.
9. Adjust seasoning if necessary and garnish with chopped fresh parsley.
10. Serve the Cajun pasta hot, optionally topped with Parmesan cheese for an extra burst of flavor.
